Glossary of terms

  • V8 Juice: Juice produced from eight different vegetables.

  • Van der Hum: South African brandy-based liqueur which is flavored with naartjies (tangerine-like variety), nutmeg, and several other spices.

  • Van Der Hum Liqueur: South African liqueur made from Cape tangerines, brandy, plants, seeds and barks.

  • Vanilla: The bean or pod of a tropical climbing orchid.

  • Vanilla Extract: A flavoring made of concentrated essence of vanilla and usually used in baking.

  • Varietal Wine: Wine produced primarily from a single grape variety and is so labeled.

  • Vat 69: A blended Scotch whisky produced by William Sanderson and Son, which is named after the original vat blend. It contains forty percent alcohol by volume.

  • Vin Santo (veen SAHN-toe): Italian wine term meaning "wine for the saints." A sweet dessert wine, made in Tuscany primarily from dried Malvasia.

  • Vinegar: Sour tasting liquid made by the fermentation of beer, cider, or wine and that is used as a condiment or a preservative. It can now be found in many flavors and colors.

  • Vitamin C: Vitamin that can be found in citrus fruits, tomatoes, and some green vegetables.

  • Vendange Tardive (vahn-dahnj tahr-deev): French term for "late harvest," used in the Alsace region to indicate that the grapes were left on the vines to mature to a high level of sweetness but were then fermented dry or almost dry, rendering the wine rich and full-bodied.

  • Vermouth: An aperitif wine derived from grapes.

  • Vin (van): French for "wine" ("vino" in Spanish or Italian).

  • Vintage: Year or season of grape growing. Vintage wine is wine that is produced primarily from grapes harvested in a single year.

  • Viticulture: The science of grape growing.

  • Vinifera, Vitis Vinifera: Scientific name of the primary species of grapevines used for winemaking. It includes most European grape varieties.

  • Vinification: Winemaking, including all the operations and processes involved.

  • Vintner: Originally, it meant a wine merchant yet is now widely used as a term for the owner or manager of a wine-producing company.

  • Vodka: Clear spirit that is generally made from grain but can be distilled from other starches, such as potatoes, corn, and beets. Vodkas are commonly flavored with essences of citrus, spices like peppers, or other fruits.

  • Volnay: One of the best districts of Burgundy's Côte de Beaune for producing red Burgundy.

  • VS: Abbreviated term for Very Special, which is the standard-level brandy from Cognac and Armagnac. It is generally aged three to seven years.

  • VSOP: Abbreviated term for Very Special Old Pale, which indicates that a brandy from Cognac and Armagnac is aged from five to ten years and has more body than VS brandies.
