Mace: A spice produced from the dried outer shell of the nutmeg.
Mad Melon Watermelon Schnapps: A brand name of schnapps that is flavored with melon and watermelon.
Madeira: 1. Fortified wine, resembling sherry, produced in the Maderia Islands, a possession of Portugal, that consists of eight islands off the northwest coast of Africa. The wine is aged between four to six months in casks in a very warm chamber. 2. (muh-DEH-rah) Portuguese island in the Atlantic from which we obtain rich, Sherry-like dessert wines.
Maggi Seasoning: Strong liquid seasoning produced by Maggi.
Magnum: Oversized bottle of 1.5 liters, having about twice the capacity of a standard 750-ml wine bottle.
Maibock (my-bok): Special springtime release of bock beer, normally pale in color.
Mainstay Cane: The brand name of a double distilled cane liquor that is normally made in South Africa.
Malbec: One of five major red wine-grape varieties of Bordeaux.
Malibu Rum: Coconut flavored rum that is 28 percent alcohol by volume.
Malt: Primary ingredient in beer brewing that is produced by allowing barley, among other grains, to begin germination before it is kilned, or heated in an oven, to stop the process.
Malt Liquor: Alcoholic beverage produced in the United States. It is made in the same manner as beer, yet it has a much higher alcoholic content. Each state sets the maximum permitted alcohol level with eight degree being the max.
Mash: A prrocess by which water and malted barley, among other grains, are mixed and held at specific temperatures in order to convert the starches of the grain into sugars which can be fermented into beer.
Mandarine Napoleon: Liqueur made of rare tangerines, whose skins are macerated in grape brandy. It has forty percent alcohol by volume.
Mango: Tropical fruit with a smooth rind and an orange, sweet juicy flesh. It has an oval shape to it.
Mango Juice: A beverage produced with water and the juice of mangoes.
Mango Liqueur: A mango flavored liqueur.
Mango Pulps: The pulps of the mango fruit.
Manila Dark Rum: Brand of dark rum normally produced in the Philippine Islands.
Maple Syrup: An extremely sweet syrup produced from the sap of the sugar maple.
Maraschino Cherries: Cherries used as a garnish and preserved in or flavored with Maraschino liqueur.
Maraschino Cherry Juice: A juice flavored with Maraschino cherries.
Maraschino Liqueur: Cherry liqueur made from Maraska cherries that are normally grown in Dalmatia. These cherries tend to be sour and taste like bitter almonds. They are thirty percent alcohol by volume.
Marasquin: Cherry-flavored liqueur made from the distillation of green cherry kernels that is normally produced by De Kuyper.
Margarita Mix: A mix containing sugar, water, lime puree, and other ingredients that allows you to make margaritas by simply adding ice and alcohol.
Martini and Rossi Dry Vermouth: A well-known brand of Italian vermouth.
Martini and Rossi Extra Dry Vermouth: A well-known brand of Italian vermouth.
Melon: Large fruit of trailing plants, having a hard rind and juicy flesh as well as seeds in the middle. Different varieties include the Cantaloupe and the Honeydew.
Melon Deoria: A watermelon-flavored liqueur.
Mescal: Spirit distilled using the same process as with the tequila however this is more inferior, because the cactus used to obtain the sap is not the famous blue agave. The spirit's name can also be spelt as mezcal.
Metaxa: Well-known brand of Greek brandy. The producers use stars to define the age of the liquor, each star denoting one year of aging.
Metaxa 7 Star: A seven-year-old brandy made by Mataxa.
Meursault (muhr-so): Section of Burgundy's Côte de Beaune in France known for its suave Chardonnay-based white wines.
Mexican Chocolate: A type of chocolate produced from Mexican cocoa beans that are then mixed with cinnamon and brown sugar.
Mexican Hot Chocolate: A type of chocolate produced from Mexican cocoa beans that are then mixed with cinnamon and brown sugar. When served, it is blended with hot milk.
Midi (mee-dee): A large area of southwestern France that produces large quantities of inexpensive wines. One well-known area, Languedoc-Roussillon, lies within the Midi.
Midori: Famous bright green musk melon liqueur. It has thirty percent alcohol by volume.
Mineral water: Natural spring water that can be still or sparkling. It normally contains a good deal of minerals.
Mint: Any plant within the aromatic family 'mentha'. The leaves are used to make essential oil or for seasoning and flavoring.
Mint Brandy: Mint-flavored brandy.
Muscat Wine: Heavy-flavored wine produced using the Muscat grape, a small type of grape that can be very sweet by nature.
Muscatel: Sweet dessert wine.
Must: A pulpy solution formed before fermentation when fresh grapes are crushed with their skins, seeds, juice and bits of stems.
Myer's Rum: Type of rum made by the Jamaican distillery Myers. It contains forty percent alcohol by volume.
